A Cornerite asked me about the Depuy Canal House in my Deerslayer post, so I thought I would share my answer with everyone.

Try anything. John Novi, the chef and owner, is a genius and a wild man. He invented eclectic American cuisine before the CIA (Culinary Institute of America) industrialized the process, and with him all the gimmicks are still fresh. One admires even his misses.
