INDIANAPOLIS, Aug. 17 — The deep-fried Combo Plate may be a little more healthful this year at the Great Indiana State Fair. So say the fair’s leaders, who, taking a step rarely seen in the realm of corn dogs and fried pickles, have banned oils with trans fats from all the fryers that line the grounds here.

INDIANAPOLIS (AP) — Nobody would claim that a deep-fried Twinkie or Milky Way bar is health food.But maybe it’s easier to justify eating one, if you know it’s been deep-fried without artery-clogging trans-fat oil.
Indiana is now the first state to ban trans-fat cooking oils at its state fair, which opened today.
A fair spokesman says it didn’t make much difference to vendors, since about 70 percent were already using trans-fat-free oils.
It only applies to fried foods served at the fair, where the menu ranges from crunchy and greasy onion “blooms” to deep-fried candy bars, along with corn fritters and the familiar funnel cakes.
